Fresh seafood is sourced throughout the year, including caught alfonsino and raw tuna, and in season from early summer, wild sea oysters, sardines and horse mackerel, pufferfish and saury from early autumn, raw mackerel and spear squid at the end of autumn, and monkfish and gurnard from December.
